Ingredients:


Fish:

- 500 grams of fish (choose your preferred type, such as tilapia, carp, or milkfish), cleaned and cut as desired.

- 2 banana leaves or teak leaves (for wrapping)


Spice Paste:

- 3 red chili peppers (adjust according to your desired level of spiciness)

- 4 bird's eye chili peppers (if you like it extra spicy)

- 3 cloves of garlic

- 4 shallots

- 2 cm turmeric, grated

- 2 cm ginger, grated

- 2 cm galangal, grated

- 1 tsp shrimp paste (optional, if desired)


Additional Seasoning:

- 3 kaffir lime leaves, finely sliced

- 2 stalks lemongrass, bruised

- 2 bay leaves

- Salt to taste

- Sugar to taste

- Lime juice as needed


Instructions:


1. Prepare the Ingredients: Clean the fish and cut it as desired. Soak the fish in lime juice and a pinch of salt for about 15 minutes. While waiting, you can prepare the spices that will be ground.


2. Grind the Spice Paste: Grind the red chili peppers, bird's eye chili peppers, garlic, shallots, turmeric, ginger, galangal, and shrimp paste (if using) in a mortar and pestle or blender until smooth.


3. Season the Fish: Once the spice paste is ready, mix it with the soaked fish. Add kaffir lime leaves, lemongrass, bay leaves, salt, and sugar to taste. Mix well until the fish is thoroughly coated with the spice mixture.


4. Wrap the Fish: Take a piece of banana leaf or teak leaf and briefly heat it over a flame to make it pliable. Place the fish mixture in the center of the leaf, then fold and wrap it tightly, similar to folding an envelope. You can use toothpicks to secure the package and prevent it from opening.


5. Steam or Grill: Pepes ikan can be either steamed or grilled. If you're steaming, place the wrapped pepes in a steamer for about 30-40 minutes until the fish is cooked. If you're grilling, cook it over charcoal or in an oven at 180-200 degrees Celsius (356-392 degrees Fahrenheit) for about 30-40 minutes or until the leaf package turns a dark brown color.


6. Serve: The pepes ikan is now ready to be served. Unwrap the leaf package and enjoy the fish with warm rice. Enjoy your meal!
