PORK ROLL RECIPE

Ingredients:
- 1 whole pig (about 40-50 pounds), cleaned and prepared
- 10 cloves of garlic, minced
- 5 shallots, minced
- 2 tablespoons of turmeric powder
- 2 tablespoons of coriander powder
- 1 tablespoon of cumin powder
- 2 tablespoons of crushed black peppercorns
- 2 tablespoons of sea salt
- 5 kaffir lime leaves, finely chopped
- 5 stalks of lemongrass, white parts only, finely chopped
- 5 tablespoons of cooking oil
- Banana leaves for wrapping
- Bamboo skewers for securing the pig
- Charcoal or wood for roasting
Spice Paste:
1. In a mortar and pestle or a food processor, grind the garlic, shallots, turmeric powder, coriander powder, cumin powder, crushed black peppercorns, and sea salt until you get a smooth paste.
Marination:
1. Mix the spice paste with the chopped kaffir lime leaves, lemongrass, and cooking oil to create a marinade.
2. Rub the marinade thoroughly all over the pig, both inside and outside, ensuring it reaches all crevices and cavities.
Wrapping:
1. Lay out several large banana leaves and place the marinated pig on top.
2. Wrap the pig tightly with the banana leaves to secure it.
Roasting:
1. Preheat your grill or fire pit to medium heat.
2. Insert bamboo skewers through the wrapped pig for stability and easy rotation.
3. Position the pig on the grill or fire pit and commence roasting. This process will take several hours, requiring patience for slow, thorough cooking. Turn the pig regularly for even roasting.
Basting:
1. Throughout the roasting, you can baste the pig with the remaining marinade or a mixture of coconut oil and turmeric powder. This enhances moisture and imparts additional flavor.
Finishing:
1. Once the pig is fully cooked and the skin turns crispy and golden, remove it from the grill or fire pit.
2. Allow the pig to rest briefly before carving. This permits juices to redistribute, rendering the meat more tender.
Serving:
1. Carve the pig into serving portions, including the delectable crispy skin.
2. Present the babi guling with traditional accompaniments like steamed rice, lawar (a Balinese vegetable and coconut dish), sambal matah (a spicy condiment), and other chosen sides.
