Ingredients:

- 500 grams of beef (cut into small pieces)

- 2 bay leaves

- 2 kaffir lime leaves

- 2 lemongrass stalks (bruised the white part)

- 400 ml of thick coconut milk

- 200 ml of thin coconut milk

- 2 tablespoons of cooking oil

- Salt to taste

- Sugar to taste


Rendang Spice Paste:

- 8 dried red chilies (adjust to your preferred level of spiciness)

- 6 shallots

- 4 cloves of garlic

- 3 cm ginger

- 3 cm galangal

- 2 cm turmeric

- 1 teaspoon coriander seeds

- 1/2 teaspoon cumin

- 1/2 teaspoon white pepper

- 4 candlenuts


Instructions:


1. Start by grinding all the rendang spice paste ingredients into a smooth paste. You can use a blender or a mortar and pestle.


2. Heat the cooking oil in a large pan or pot over medium heat. Sauté the ground rendang spice paste, bay leaves, kaffir lime leaves, and lemongrass until fragrant and the paste changes color.


3. Add the pieces of beef to the sautéed spice paste. Stir well and let the meat change color.


4. Pour in the thin coconut milk into the meat and spice mixture. Stir well and bring it to a boil.


5. Once it's boiling, add the thick coconut milk and stir. Then, reduce the heat to low and let the rendang simmer until the meat becomes tender and the flavors have developed. This may take around 2-3 hours. Remember to stir occasionally to prevent sticking or burning.


6. Adjust the taste with sugar and salt according to your preference. Rendang should have a balanced sweet, spicy, and savory flavor.


7. Continue to cook until the rendang becomes dry and oily. When the oil starts to appear on the surface and the meat turns brownish, it's ready.


8. Remove the rendang from the heat and let it cool for a moment before serving.


Rendang is typically served with steamed white rice or yellow rice. Enjoy your meal! Don't forget to adjust the spiciness level by adding or reducing the number of dried red chilies according to your preference.
