2. Once the palm sugar has dissolved, let the palm sugar syrup simmer for a few minutes until it slightly thickens. Ensure it is not too thick for easy shaping when making Kelpon.
3. Afterward, mix the grated coconut into the palm sugar syrup. Stir well, allowing the coconut to absorb the palm sugar aroma. Remove it from the heat and set it aside.
Step 3: Shaping the Kelpon
1. Take a small portion of the cooled glutinous rice dough. Shape it into a small, flattened circle in your palm.
2. Place a pinch of the palm sugar and coconut mixture in the center of the flattened glutinous rice dough.
3. Fold the glutinous rice dough around the filling to form a ball. Make sure the filling is completely enclosed.
4. Repeat this process until you've used up all the glutinous rice dough and palm sugar filling.
